I have never made rolls before in my life. I have watched and even helped mom a few times. I think I have 2 reasons for never attempting rolls on my own. #1 - Mom is the master roll maker. I can't even come close. I don't even think she uses a recipe. She has it memorized.
#2 - I am afraid of yeast!!! Enough said!
Well I found this recipe online & I don't even remember where. But it looked pretty easy so I thought I could give it a try.
Buttermilk Refrigerator Rolls
3 cups buttermilk (room temperature)
3 cups flour
1 T. yeast
1/2 cup sugar
3 eggs, beaten with fork
2 tsp. salt
5 cups flour (sometimes you need a cup more--it should not be too sticky)
1/2 cup oil
1 tsp. baking soda
Dissolve yeast in 1/4 c. warm water and let proof a few minutes. Mix the buttermilk, flour and yeast together thoroughly in a large mixing bowl. Let this stand at room temperature until double in size, about 2 hours.
Add sugar, eggs, salt, flour, oil, and baking soda. Mix well and knead for 7-10 minutes. Roll out what you want and place the rest in the refrigerator, covered. The next time you want some fresh baked rolls, take from the bowl what you want and again put the rest back in the refrigerator. It will keep for 7 days.
Let rolls ride on baking sheets until double in size. Time depends on the room temperature, usually 1 1/2 to 2 hours. Dough from the refrigerator will take longer because the dough is cold. Bake at 350 degrees for 10-12 minutes. Brush with melted butter if you like.
We had these tonight before the boys went to bed as a little snack. They were pretty good. Especially with a little butter & honey. (Does that remind anyone of dad??)
I got a phone call tonight from grandma. She wanted me to tell the boys thanks so much for coming and helping her. She also told me about one of her really good friends who is in hospice right now & will probably not make it another night. She called to talk to her but her friend couldn't speak. She just made noises. Grandma knew she understood what she was telling her. She told her that she loved her & that she would see her again someday. It just broke my heart. After I hung up the phone I just sat there thinking of how I would feel if I knew a really great friend that I loved so much was going to die. I just cried. I am just grateful that I do know that we will see those we love again.

I think that might be a roll recipe I could actually do! That made me cry about your grandma. Knowing the plan of salvation is truly amazing huh?
I should call Grandma.
I love how that roll recipe can last a week in the fridge! I'm sorry about your grandma's friend. I keep thinking that I want to live a long time, but I don't want to get old. The gospel really does give us a better perspective doesn't it?
i am afraid of yeast too! Oh, Grandma! That is so sad! that made me cry too!!
i can never get stinkin yeast to work for me... so i try to stay as far away from it as possible.
was your grandma's friend someone from her ward? i'd like to know who if she was? i visited a lot of those sweet ladies while i was in her ward. so sad.
Jen,
Her name is Vera John
ohhh.... i was so afraid it was her. she was one of my most favorite people in that ward. so sad to hear the news this morning that she did pass away. :(
So sad about Vera. I visited her at the facility she was at before they moved her and she was as spunky as ever. I actually had it planned to see her the afternoon after she passed and obviously didn't get the opportunity. She will be greatly missed for sure. :(
