I have never made rolls before in my life. I have watched and even helped mom a few times. I think I have 2 reasons for never attempting rolls on my own. #1 - Mom is the master roll maker. I can't even come close. I don't even think she uses a recipe. She has it memorized.
#2 - I am afraid of yeast!!! Enough said!
Well I found this recipe online & I don't even remember where. But it looked pretty easy so I thought I could give it a try.
Buttermilk Refrigerator Rolls3 cups buttermilk (room temperature)
3 cups flour
1 T. yeast
1/2 cup sugar
3 eggs, beaten with fork
2 tsp. salt
5 cups flour (sometimes you need a cup more--it should not be too sticky)
1/2 cup oil
1 tsp. baking soda
Dissolve yeast in 1/4 c. warm water and let proof a few minutes. Mix the buttermilk, flour and yeast together thoroughly in a large mixing bowl. Let this stand at room temperature until double in size, about 2 hours.
Add sugar, eggs, salt, flour, oil, and baking soda. Mix well and knead for 7-10 minutes. Roll out what you want and place the rest in the refrigerator, covered. The next time you want some fresh baked rolls, take from the bowl what you want and again put the rest back in the refrigerator. It will keep for 7 days.
Let rolls ride on baking sheets until double in size. Time depends on the room temperature, usually 1 1/2 to 2 hours. Dough from the refrigerator will take longer because the dough is cold. Bake at 350 degrees for 10-12 minutes. Brush with melted butter if you like.
We had these tonight before the boys went to bed as a little snack. They were pretty good. Especially with a little butter & honey. (Does that remind anyone of dad??)
I got a phone call tonight from grandma. She wanted me to tell the boys thanks so much for coming and helping her. She also told me about one of her really good friends who is in hospice right now & will probably not make it another night. She called to talk to her but her friend couldn't speak. She just made noises. Grandma knew she understood what she was telling her. She told her that she loved her & that she would see her again someday. It just broke my heart. After I hung up the phone I just sat there thinking of how I would feel if I knew a really great friend that I loved so much was going to die. I just cried. I am just grateful that I do know that we will see those we love again.
